Whoa, whoa.  Easy.

Sometimes fighters get added incentive.  I'd say Mousse isn't that strong,
but I'd rank him up with Kuno for skill.  He can win Shampoo if he put his
mind to it, and if both he and Shampoo realize that relationships don't
always mean fighting to win, but protecting to win (the second movie
scene, we've all seen it).
Shampoo ranks high in fighting skill amongst the women.  She's definitely
more skilled than Ukyou, Akane, and Kodachi, no doubt.  The reason she
lost to her great-grandmother?  She is still training.  Cologne has a few
decades (centuries?) of training under her belt, while Shampoo hasn't even
hit eighteen yet.  Also, she wants Ranma to be stronger for Shampoo.  She
is currently focussing more attention on Ranma, so that he will be strong
enough to support Shampoo.
In my opinion, the women CAN keep up.  Ranma himself states that a man
gives an edge to a woman when they fight.  Many times, the man wins when
encouraged by emotion or reason to, but in a reasonless fight?  The sides
are pretty even.
Also, you mention that Ryouga beats Shampoo soundly.  Are you sure?  If he
did, would not Shampoo start that whole Chinese-Amazon-ritual thing again?
It doesn't seem to quite fit.
