Here's my current favorite's list, separated into what's readily available,
and what is currently airing in Japan.
Readily available:
Kimagure Orange Road (Animeigo has just released new DVD versions that are
significantly cheaper than the original boxed set)
Maison Ikkoku (All time favorite. Just got a beautiful cel of Kyoko and
Godai about a month ago)
Chobits (very addictive)
Kare Kano (His and Her Circumstances) - when does the next DVD come out? I
can't wait!
Love Hina
Currently in Japan( or at least very recently):
Haibane Renmei - absolutely amazing. I bought the DVDs from Japan on this
one). Rakka is a haibane (kinda of like an angel) who's learning what that
really means. From the same guy who did Serial Experiments Lain.
Kiddy Grade - get past the first 7 or 8 episodes, and this show really hits
it's stride. I love the music!
Saishuu Heiki Kanojo - only seen the beginning, but I can tell it's headed
toward a sad ending. very interesting
Naruto - Naruto is a ninja. I've only seen the first episode, but it's
very popular. Looks interesting.
Mahou Tsukai ni Taisetsu na Koto - LOTS of favorable reviews. I just
finished downloading and plan to watch it soon.
GetBackers - looks like a fun show. I've seen about four episodes.
Wolf's Rain - some of the best animation I've seen in awhile. Looks to be
one of the big hits this season.
Azumanga Daioh (Daiou at one website) - I didn't like it when I first saw
it, but it's starting to grow on me.
Do yourself a favor and either get the fansubs or wait for the official
releases. Most of these should be coming to the US soon.
Other shows I've heard good things about but not watched yet:

Asagiri no Miko
Kanon
Hand Maid Mai
Licensed by Royal
Mouse
Raimuiro Senkitan
Sister Princess Repure
Witch Hunter Robin
I can't really vouch for any of these except to say many of them are really
popular in the fansub community. I'm looking forward to seeing most of
them at some point.
