I believe that Shampoo *does* love Ranma... or at least she thinks she
loves him.  She also wants to bring him back as her husband.  But if it
really came down to it, I think her honor is more important than having
love in her marriage.  Of course, that's IMHO only...

Seriously, though, let me rephrase that.  Maybe selfish really is the
wrong term to use.  Make that "oblivious", that seems better.  Because
they (Shampoo and Ukyou) really *do* think Ranma would love them and be
happy with them - they simply can't see it (or refuse to see it) any
other way, it's that simple, I think...
